- Citrus mushroom pasta -

Ingredients:

  • 4oz mushrooms *

  • 1/3 sweet onion

  • 4 cloves of garlic

  • 4 oz pasta

  • 1/4 c white wine

  • 1/4 c cream*

  • 1 grapefruit

  • 1 c water

  • 1 tbs butter

  • 1 tbs parsley (garnish)

Serves: 2

Time: 30 min

Instructions:

Slice onions and garlic, saute with water until cooked (about ten minutes).

Add mushrooms (*I used portabella) and butter into pan season with salt and pepper.

Cook pasta.

Segment 1/2 grapefruit.

Add wine, cream (*I used hemp cream), and squeeze 1/2 grapefruit into onions, garlic, and mushroom pan.

Season with salt and pepper.

Garnish with grapefruit slices and parsley.
